The lemon is a species of small evergreen tree in the flowering plant family Rutaceae. Native to South Asia, primarily North eastern India, the tree’s yellow fruit is used for culinary and non-culinary purposes throughout the world. Both the peel and juice can be used. The juice has both culinary and cleaning uses and is known for its bitter flavour, thanks to its 5% – 6% citric acid content and pH of around 2.2.

Dried lemon peel comes from the outer skin of the fruit. Packed with zesty flavour, the skin lies on top of the bitter-tasting pith, and the fruit itself can be used in a variety of forms. The peel can be cut into fine pieces or ribbons or even ground into a powder. Few people realise the peel is more nutritious than the fruit itself with higher levels of vitamins A and C, potassium, beta-carotene, magnesium and calcium.

It’s also used in some herbal tea blends to add a crisp, refreshing edge. Lemons are a fantastic source of citric acid which is used as a flavouring, preservative or emulsifier. Lemon zest is also ideal for baked flavouring baked goods.

Thanks to its citrusy, vibrant aroma, lemon peel is often used in skincare. The resulting products have an uplifting fragrance which is instantly recognisable. It’s typically put to good use in the bathroom by being added to salt scrub blends. Lemon peel is rich in antioxidants which can help to expel toxins from the body, making it a good choice for detox-style products.

Lemons are a fantastic source of citric acid which is used in production as a flavouring, preservative or emulsifier. When combined with sodium bicarbonate, it is citric acid that can also deliver an effervescent fizz to drinks, powders and bath products. So strong are its properties that it’s widely used as a cleaning and descaling agent. It can also be used in soap or candle making.

Not only is a twist of lemon peel the most common garnish for a G&T or a Martini but it’s also among the most common botanicals used in gin production. Once it’s been harvested and dried, it can be infused and then distilled, leaving behind its characteristic fresh, citrus, tart note. Its crisp profile cuts through heavier juniper or spicy notes, making it the perfect companion for many gins.
