History and background

Celery has a long and distinguished history in cuisine and herbal medicine. The known history of the vegetable dates all the way back to ancient Egyptian times; garlands made from the plant have been unearthed in several tombs from the era. Subsequently, the ancient Greeks used celery for a similar purpose, creating wreaths which were awarded to winners at the Nemean Games.

Records of celery seed begin a little later, around 850 B.C. At this time, the seed was used in medicine, and has continued to be ever since. In the years that followed, the humble seed was used to treat everything from cold and flu symptoms to skin conditions. Subsequently, celery seed was used more in cooking, thanks to its concentrated, savoury taste.

How to use celery seeds

Depending on location and cultivar, celery stalks, leaves or hypocotyl are eaten and used in cooking. Celery seeds are also used as a spice and their extracts have been used in herbal medicine. In cuisine, they are added to salads, sauces, dressings, brines, dry rubs and more, either in their whole form or ground. Whole seeds are about the size of a poppy seed, with a dark brown colour.
