Soapwort leaves and roots are rich in saopins which produce a lather in water and can be used for cleaning instead of modern soaps and detergents. The herb was used extensively in the early textile industry as a cleaning and sizing agent. Despite its toxic potential, Saponaria officinalis finds culinary use as an emulsifier in the commercial preparation of tahini, halva and in brewing to create beer with a good “head”.
