Description

Common chicory root is a woody, herbaceous plant of the dandelion family Asteraceae. Usually seen with bright blue flowers, it can also have white or pink flowers (although the latter colours are rare). Many varieties are cultivated for their salad leaves, chicons or roots, which are baked, ground and used as a coffee substitute and food additive. These plants are native to Europe and Asia and were first introduced to North America in the 19th century.

How to Use Chicory Root

Chicory root can be baked, ground, and used as a coffee substitute and food additive. Since the 21st century, inulin, an extract from the root, has been used in food manufacturing as a sweetener and source of dietary fibre.

As well as making a nutritious (and caffeine-free) alternative to coffee, chicory root can also be ground with other spices to brew a warming tea or blended into a smoothie. In food, it’s commonly found in fibre and protein bars. Due to its inulin content, which is thought to act as a prebiotic, it’s also added to supplements.

Historically, chicory was grown in Egypt as a medicinal plant. The Ancient Egyptians believed the plant could purify the blood and the liver. In South Africa, the widespread roots and stems are used to make tea for jaundice, and chicory syrup is used as a tonic and purifying medicine for infants.
