How to cook with coriander seeds: Five recipe ideas

Coriander is one of the world’s most revered spices. Part of the Apiaceae family – the same plant group as carrots, celery and parsley – coriander is aromatic, its taste resembling parsley with hints of citrus.

It’s been grown for culinary and medicinal purposes for millenia; its known usage dates back to around 5000 B.C, and the spice was even mentioned in the Bible (Exodus 16:31). There are few other spices that have such a rich heritage.

That’s all well and good, but what about today – what dishes do people add coriander to? We’ve scoured the internet to find five fun recipes that really shine the spotlight on coriander seeds and their aromatic flavour. The following dishes simply wouldn’t be the same without them.

Carrot and coriander soup

A classic combo that continues to win new fans to this day. A hearty, cost-effective and healthy winter warmer, this timeless soup is the perfect way to start or end a cold winter’s day.

There are plenty of recipes online for this soup, many of which also use onions, garlic and thyme for a more well-rounded, balanced flavour.

Garam masala

OK, this isn’t a dish – it’s a spice blend. But it’s a versatile one; garam masala is used extensively in Indian cuisine, so it’s a good idea to have some on your spice rack. You can make your own garam masala pretty easily, and coriander seeds are a crucial ingredient.

Thai green curry

Typically served with either chicken, prawns or veg, Thai green curry is another dish that simply wouldn’t be the same without coriander. Used alongside lime juice and zest, coriander really helps this popular meal linger long on the taste buds. There’s a reason why people keep cooking it!

Lamb dishes

From homemade burgers to curries, coriander pairs really well with lamb. Used alongside turmeric, cumin and ginger, coriander can help give lamb a memorable flavour.

Vindaloo

A true takeaway favourite, vindaloo is known for its heat – but there’s more to the dish than that. Cook an authentic vindaloo from home and you’ll realise exactly what has made this curry such an enduring classic. Coriander seeds are joined by the likes of cardamom pods, cumin, mustard seeds, cinnamon, ginger and red chillies, resulting in a sensational flavour.
